Ingredients
1 cup Gaia Quinoa
2 cups of water
¼ cup Gaia extra virgin olive oil
2 limes, juiced
2 teaspoons ground cumin
¼ cup bell peppers
1 teaspoon salt
½ teaspoon red chilli flakes, or more to taste
1 ½ cups halved cherry tomato
5 green onions, finely chopped
¼ cup chopped fresh coriander
Salt and ground black pepper to taste
Gaia mixed seeds (sprinkle)

Serves: 1-2 people

Method:
Step 1: Bring Gaia Quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until Gaia Quinoa is tender and water has been absorbed 10 to 15 minutes. Set aside to cool.
Step 2: Whisk Gaia extra virgin olive oil, lime juice, cumin, salt, and red chilli flakes together in a bowl.
Step 3: Combine Gaia Quinoa, cherry tomatoes, bell peppers, and green onions together in a bowl. Pour dressing over Gaia Quinoa mixture; toss to coat. Stir in coriander; season with salt and black pepper. Sprinkle some Gaia mixed seeds and Serve immediately.
