How to cook Quinoa and Sweet Potato Cutlets.

This Quinoa breakfast recipe is quick and easy to cook. First of all we will cook quinoa grains and combine it with boiled sweet potato, vegetables and spices.

These healthy Quinoa cutlets can be served with yogurt dip and green chutney as a breakfast, snack or side dish. You can bake quinoa cutlets instead of frying.

For this easy quinoa recipe, I have used white quinoa but you can also use red quinoa. You can cook kinoa as you cook white rice in an open pan.

Quinua being a superfood is high in protein, fiber, vitamin E and potassium and it is also gluten free. It gets easily digested.

According to recent studies, Quinoa Breakfast could be a good choice for us, specially for weight watchers and diabetic patients.

Try this tasty and nutritious kinoa recipe and serve something healthy and different! Sweet potatoes give a unique sweet flavour – making it a favourite sweet quinoa recipe for kids.

Ingredients:
1/2 bowl white quinoa
500 gms boiled and peeled sweet potato
1/2 bowl corn kernels
1 grated carrot
1/2 bowl boiled peas
2 tbsp chopped coriander leaves
1 chopped green chilli
2 tbsp rice flour
1 tsp grated ginger
1.5 tsp table salt
1/2 tsp red chilli powder
2 tsp garam masala
1/2 tsp jeera powder
1 tsp chaat masala
Olive oil for frying

Quinoa cooking instructions:
[Preparation time: 20 min, cooking time: 25 min]

Boil quinoa in 2 cups of water and cook on low flame for 10-15 minutes; let it cool.

Take a big bowl, put mashed sweet potato in the bowl, add boiled quinoa, peas, grated carrot, chopped corn kernels, coriander, ginger, green chilli, salt and all the spices.

Mix all the ingredients together and knead like a dough. Now make small round and flat cutlets or tikkis with your hands using this dough. You can make around 12-14 cutlets with this dough.

Take rice flour in a bowl add 2 tbsp of water, mix it to make a solution. Now coat all the cutlets with this solution. You can also coat cutlets with bread crumbs or oats.

Take iron skillet and turn on gas, pour little olive oil on skillet and shallow fry the quinoa cutlets, 3-4 at a time. Fry one side for 1 min on medium to low flame then flip and fry other side also. Keep flipping till the kinoa cutlets become golden brown and crispy.

Fry all the cutlets and serve hot with green chutney and tamarind chutney. You can also top these with yogurt dip.
