INGREDIENTES
1/3 cup Moong daal
2/3 cup Quinoa
1 teaspoon ghee/ refined butter
1 teaspoon whole cumin
pinch of Hing/ Asafetida
1 cup spinach
1 cup cut mixed veg, I used carrots/ beans/corn/peas. You can use whatever vegetable you have available. I also add broccoli, cauliflower.
1.5 teaspoon salt.
1 tsp turmeric/haldi.
3 cups water

INSTRUCTIONS
Mix Quinoa and the daal in a bowl and wash nicely about 3-4 times. Then soak the mixture in water for 15/20 mins
Set instant pot on Saute setting. Let the pan heat up for couple mins. If not using a pressure cooker, cook for 3-4 whistles.
Add butter, after butter melts, add cumin and a pinch of hing.
Saute for couple more mins.
Add spinach, mixed vegetables, soaked quinoa & lentil mixture, salt and turmeric and continue to sauté for few more minutes.
At this point you can smell a very nice aroma of ghee/butter.
Add 3 cups of water, mix well and close the instant pot lid.
Change Instant pot setting to Pressure cook. Set timer for 4 mins.

I m using an instant pot.. If using a stove top pressure cooker, cook for 3-4 whistles, all other steps remain same

Once you hear the whistle, let it release pressure naturally.
With a masher , mash the cooked khichdi just a little bit until you feel all the ingredients are nicely mixed. This step is optional. You can just mix it with a spatula as well.
Taste and add salt to your liking, if needed. Top it off with your favorite toppings such as onions/ cilantro/ fresh green dhaniya,. I served with pickle and Papad/Wafers… Serve hot!
