This recipe is absolutely amazing if you love quinoa! It’s packed with so many flavors. Super easy to make! An excellent source of iron and many other nutrients and vitamins. It’s light and flavorful! 
You need to give it a try. 

👨‍🍳ingredients:

1 cup of quinoa
2 cups of water, chicken stock, or veggie broth.
Pinch of salt and ground pepper 

Rinse the quinoa in a fine mesh strainer for about a minute.

In a medium saucepan over medium high heat add the rinsed quinoa and the water or stock. 
Bring to a boil, then reduce to a low simmer and cook uncovered, until the quinoa absorbs all the water, approximately 10-15 minutes. 

Cover and remove from heat for 5 minutes. This allows the quinoa to fluff up. Then use a fork to fluff it up. 

Let it cool before adding your choice of toppings. 
We added these organic ingredients, feel free to get creative in the step. 
Tomatoes
Corn
Avocados
Raisins
Feta cheese 
Black olives

For the refreshing olive oil lemon dressing you’ll need, 

1/4 tsp ground black pepper
1 tsp of pink Himalayan salt
1/4 cup of extra virgin olive oil
1/3 cup fresh lemon juice

Mix everything in an airtight container, or a jar and mix very well for a minute. 
Drizzle on top and enjoy.
