Ingredients:
🍃Steamed Quinoa
1 and 1/2 cups quinoa
1 cup coconut milk
1 and 1/2 cups water
Thyme
2 stalks scallion
1 whole scotch bonnet pepper
Salt and all purpose seasoning (seasoned to your liking)

🍃Tofu
1 block extra firm tofu
***Pressing or patting the tofu dry is ok but I find that boiling the tofu makes it firmer. I boil in salt and water for about 20 minutes( completely submerged tofu and flip half way through) Once done remove tofu and allow it to cool. You can boil whole or in decent size pieces. Salt, white pepper, garlic and onion powder to season tofu you can also add a bit of all purpose seasoning.

1 head small Pak Choi (leaves only)
1/4 large cabbage
Few snow peas
1 small carrot
1/2 onion
3 cloves garlic
1/4 red and green bell pepper
1 small tomato
3 stalks scallion
A pice of scotch bonnet pepper
All purpose seasoning (used a mixture of old bay and vegetable bouillon).
Season to your liking and enjoy!!!
